In some parts of the Black Sea, the dish is known as “Kuymak,” while the people of Çamlıhemşin call it “Havits.”
Although it is extremely simple to make, its flavor is unforgettable. The harmony of butter, corn flour, and regional cheese makes this dish a masterpiece of the Black Sea kitchen.

👉 In Samsun and Trabzon, corn flour stands out.
👉 In Rize, cheese takes center stage.

Tips for a Perfect Mıhlama (Ready in 10 Minutes)

For the best texture and flavor, use a copper pan and a wooden spoon.
Roast the corn flour in butter just enough so that the flour smell disappears — but be careful not to burn the butter.
For the cheese, prefer Trabzon Kolot cheese or çeçil, which melts and stretches beautifully.
